The Wise Distillery is the only Margaret River distiller of Organic Gin
distilled from our own chardonnay and other grape varieties on-site as the base for our spirits. This is done to retain the fruit aromatics of the wine to infuse into our range of spirits. Our first Margaret River Organic Gin
The process starts with carefully selected parcels of organic Gingin clone Chardonnay grown on organic Margaret River vineyards. The grapes are fermented and the wine base is then made organically at Wise winery. The resultant organic wine is distilled giving a base alcohol. This base spirit is then triple distilled with organic botanicals being added for the final distil.
This process is time consuming and requires great attention to detail, but it is all made worthwhile when you taste the final product. The exclusion of all chemical preservatives and additives leaves a crystal clear and stunning dry gin. The Wise Organic Gin has a smooth alcohol and is very much in the classic London Dry Gin
The inspiration for a gin made to organic principles came from customer feedback saying they were unhappy with the quality of mass-produced commercial gins. Tasters of Wise gins raved about the clean, natural aroma and flavour of gin distilled from organically grown Gingin clone chardonnay grapes and pristine Eagle Bay rain water.
One of the secrets to a great Gin is in the botanicals used to flavour it. The natural oils and aromatic compounds are absorbed and infused as the botanicals are steeped and travel through the condensing coil as part of the vapour.
We use 100% organic botanicals in our gin. These are chosen from a very few select suppliers who can meet organic production requirements and who supply the finest botanicals. A blend of Juniper, Coriander Seeds, Cardamom Pods, Angelica Root and Lemon Myrtle were used to flavour this gin.
Nose – Junipers, fresh pine needles, dried bay leaf, bath salts.
Palate – Full and smooth, dry Juniper backbone which is followed by a broad and sweet spice on the mid
palate. It has an underlying fruitiness and is subtly spiced with pepper, The finish is long smooth dry and
with a touch of exotic spice, pepper and lemon.
Wise Organic Gin – 700ml – 40% ABV
For the cleanest, most natural way to enjoy your Organic Gin – pour over ice. Alternatively, mix with Fever Tree Naturally Light Tonic Water and a twist of lemon or lime if you must.

Greg's Gin & Tonic
Straight from Wise Distiller Greg Garnish
. A classic G&T made with our Organic Gin to savour and enjoy at any time. According to Greg, the 'golden rule' for a great G&T is that you must add more gin than tonic water.
- 60-75 ml Wise Margaret River Organic Gin
- 60 ml Fever Tree Naturally Light Tonic Water
- 2 slices of lemon or lime
Chill your 200ml glasses, add ice, then one slice of lemon or lime, then your Organic Gin, then your tonic water and finally the second slice of lemon or lime. And that it, you instantly made the world a happier place.
A great summer cool drink with the perfect ratio of sweet, sour and acloholic strength.
- 60 ml Wise Organic Gin
- 35 ml fresh lemon juice
- 20 ml sugar syrup
- Soda wate to serve
- Garnish with lemon slice
Add organic gin, lemon juice and sugar syrup to a shaker half-filled with ice. Stir to combine, strain into a tall glass with fresh ice cubes, top with soda, garnish with lemon slices and serve.
